  • 100 gr dates soaked
  • 105 gr all-purpose flour
  • 40 gr sugar
  • 40 ml coconut oil melted
  • 1/2 tsp vanilla extract
  • 1/2 tsp baking powder

Instructions
  1. Preheat the oven to 180˚C/350˚F and line a baking sheet with parchment paper.
  2. Add the all-purpose flour and baking powder to a foodprocessor/mixing bowl. Mix on low speed.
  3. Next add the soaked dates, sugar, melted coconut oil and vanilla extract to the dry ingredients in the processor. Mix on high speed till it forms a sticky dough.
  4. Remove the dough from the machine.
  5. Using your hands, roll small balls and place them evenly on the baking sheet.
  6. Next grab a small fork and coat in some flower. Press the fork into the little balls (1x horizontal, 1x vertical), to create a pattern.
  7. Place the baking sheet in the oven and bake for 15 minutes, if you want a cookie that's crispy on the outside and soft on the inside; and 20 minutes, if you want a crispy cookie.
  8. Store in an airtight container for up to 4 days.
  9. Enjoy!
