  • 100 gr navy beans
  • 100 gr sweet potato
  • 1/2 onion (small)
  • 1 garlic clove
  • 100 gr/ml tomato sauce
  • 50 ml coconut milk
  • 1/4 tsp turmeric
  • 1/4 tsp garam masala
  • a dash of chili powder
  • a dash of black pepper

  • 100 gr/ml tomato sauce
  • 50 ml coconut milk

Sweet Potato and Bean Curry
Instructions
  1. Rinse and chop the sweet potato in 1 inch cubes. Boil on medium high heat till almost tender. Drain and set aside.
  2. Meanwhile, chop the onion and the garlic. Throw into a pot on medium high heat. Add a tbsp of water, the turmeric, garam masala, chili powder and black pepper. Stir until most of the water has been dissolved and the onion and garlic have developed a bit of colour.
  3. To the pot add, the tomato sauce and coconut milk. Stir and lower the heat to "low". Next add the pre-cooked sweet potato and navy beans.
  4. Simmer on low heat for 10 minutes. Stirring occasionally.
  5. When the sauce has thickened, remove from the stove (If this is not the case, try adding a mixture of 1 tsp maizena and 1 tbsp water). Serve with rice and veggies.
