The added pineapple and red bell pepper will for sure give you palm tree vibes, while the lucious and rich flavoured sauce will warm you up. This easy and ready within 15 minute dish, is bound to make everyone happy.

Ingredients
  • 120 gr chickpeas cooked/canned
  • 100 ml chopped tomatoes (canned)
  • 80 gr red bell pepper chopped
  • 50 gr pineapple
  • 40 ml pineapple juice
  • 1 tsp soy sauce
  • 1 tsp white vinegar
  • 1 tsp agave syrup
  • 1 tsp maizena

Sweet and Sour Chickpeas
Instructions
  1. Place a medium sized pot on the stove on medium high heat.
  2. Next, add the ingredients, minus the maizena, to the pot.
  3. Cook on medium high heat for 5-10 minutes. Stirring occaisionally.
  4. Meanwhile mix the maizena with 1 tsp of water till smooth.
  5. Add the mixture to the pot and stir until the sauce thickens. Mix well to avoid clumps.
  6. Serve the sweet and sour chickpeas with rice or potatoes.
  7. Enjoy!
