  • 1 package puff pastry thawed
  • 2 small apples
  • 2 tbsp sugar
  • 1 tsp cinnamon
  • soymilk/water
  • raw sugar, for topping

Vegan Appelflappen/Apple turnovers
Instructions
  1. Preheat oven to 400 degrees. Line a baking sheet with parchment paper and set aside.
  2. Peel and core the apples. Chop them into small pieces.
  3. In a medium sized bowl, combine the chopped apples, sugar and cinnamon. Stir until well combined.
  4. Place 4 thawed puff pastry squares onto the baking sheet.
  5. Spoon the mixed apples in the centre of each square. Next fold the corners towards each other to create a triangle shape. Use a fork to press the edges together.
  6. Brush the tops with water or a bit of soy milk. Sprinkle with some raw sugar.
  7. Bake for 15 minutes in the preheated oven, till the appelflappen are puffed and golden brown.
  8. Enjoy!
