Peel the banana and cut in half. Slice 1/2 into small pennies to decorate. Mash 1/2 with a fork till smooth.
To a medium saucepan, add the oats; soy milk; 1/2 mashed banana; cinnamon and grounded nutmeg. Stir to combine.
Place on the stove and simmer on low heat for about 4 minutes, giving it a stir every now and then until most of the liquid is absorbed.
Remove from the stove and scoop the oatmeal into a bowl. Top with walnuts/pecans, raisins, and the remaining 1/2 of the banana. I also like to serve mine with more fruit on the side, but this is optional.
