Apple pie overnight oats. The solution to having oats in the summer. 

My go to summer brekkie? Apple pie overnight oats. It’s easy to make, requires only 5 ingredients and will satisfy your oats craving in the summer time. I make mine the night before, but you can also make it in the morning. Do give the oats the time to soak up the liquid though, about 2 hours.

  • 3/4 cup (75 gr) oats
  • 2/3 cup (150 ml) milk (I use soy milk)
  • 1 tsp linseeds
  • 1 apple
  • 1/4 tsp cinnamon
  • raisins (optional)
  • walnuts (optional)

Instructions
  1. Chop the apple in half. Grate 1/2 and chop the other 1/2 into small cubes.
  2. In a jar/bowl combine the oats, 1/2 grated apple, linseeds and cinnamon.
  3. Stir well and add the milk.
  4. Stir again until well mixed.
  5. Add the remaining 1/2 of the chopped apple on top as a garnish and cover with a lid. Place in the refrigerator for at least 2 hours, preferably overnight.
  6. Remove from the refrigerator, remove the lid and sprinkle some raisins and walnuts on top. Remember this is optional.
  7. Enjoy!
